Savory Oatmeal with Kale
1 Cup Steel Cut Oats
1 teaspoon Salt
1 Cup Kale
¼ cup onion
1 farm fresh egg
1 tablespoon Olive Oil
Bring 3 cups water to roiling boil. Add oats and salt to taste. Lower heat to simmer, uncovered for ten minutes. Meanwhile, chop kale and onion. In a cast iron skillet, heat oil on medium heat. Add onions and a pinch of salt, sweat for 2 minutes, or until translucent. Add kale to onions and sauté for three minutes or until wilted and deep green.
Remove kale and onions from skillet and set aside. Add teaspoon of oil to pan and add egg to heated skillet. Add a pinch of salt and pepper to taste. Fry to desired doneness.
Combine oats, kale and egg into serving dish. Top with scallions and hot sauce of choice, enjoy!
