Did you hear that a tornado touched down in Poolesville? Just four miles away from the farm! Trees were felled and there was some property damage in this area and in Gaithersburg.
This kind of weather is incredibly scary and got us thinking, had the tornado come just those 4 miles closer, our farm could have been toast. It's the random moments like these that threaten the work we do, and usually come on with little to no warning. We are very grateful to have been spared and able to continue the season!
With a busy week almost behind us, I thought I'd try a new format for sharing recipes and meal suggestions. These days the morning flies by and before I know it, the CSA shares are loaded up on the van and heading out to you!
So, since I usually only really get into my weekly veggies during the weekend, maybe some of you also run on a similar schedule? I'll share some recipes here and also some menu ideas to put together several vegetables.
Meal idea #1: Pasta, the green way.
Toss a bold garlic scape pesto (https://vanillaandbean.com/garlic-scape-pesto/) with your favorite pasta.
Serve with a side dish of roasted broccoli and cabbage with a sesame vinaigrette (https://joeats.net/home/charredcabbageandbroccoli/).
If you've used your garlic scapes up, or just want something different, make kale pasta sauce (https://homecookingcollective.com/kale-pasta-sauce-joshua-mcfaddens-recipe/)!
Meal idea #2: Crunchy, fresh, and light for a hot summer evening.
Make this delicious miso salmon for your main dish and use your spring onion tops like scallions (https://www.justonecookbook.com/miso-salmon/).
An Asian-inspired slaw that you can customize with whatever crunchy veggies you have on hand, kohlrabi, cabbage, broccoli, radishes, and carrots: (https://www.feastingathome.com/asian-slaw/) .
Meal idea #3: Mediterranean plates packed with flavor.
Lamb kofta kebabs that incorporate mint in both the meat mixture and the zesty salad on the side (https://www.healthyfood.com/healthy-recipes/minty-lamb-kofta-with-zesty-salad/). Use your radishes or cucumber from last week in the salad.
Meal idea #4: Put your grill to good use!
Grilled chicken with a lemony oregano marinade (https://www.halfbakedharvest.com/lemon-and-oregano-grilled-chicken/).
Ever thought to put your cabbage on the grill? Charred and crispy, this method turns this humble vegetable into the star of the show (https://www.tasteofhome.com/recipes/grilled-cabbage/)!
Round it out with a simple salad (https://www.themediterraneandish.com/lettuce-salad-recipe/).
Meal idea #5: Dips and appetizers for dinner!
Chard, tahini, lemon juice, and garlic whip up into a marvelous dip (https://www.offthemuck.com/recipes/apps-dips-sauces/swiss-chard-tahini-dip)!
Use all your alliums in this creamy, dreamy dip (https://www.washingtonpost.com/recipes/triple-onion-dip/). Cook the whites of your spring onions and garlic scapes, then stir together with greek yogurt or sour cream and the fresh green tops of the spring onions.
Make a crudite platter with all your crunchy veg. Chop kohlrabi into sticks, break the broccoli up into florets, halve your radishes, and cut up any other veggies like carrots you might have.
