Chef Josh's Recipes for Week 7!

Greetings,


Now isn’t it funny that we are writing about the winter share when it has been such a mild season! It sure does feel like spring has sprung. The warm weather is a reminder to plan to join the OAF spring CSA.


Don’t forget to register for the spring and fall shares before they are full! I just signed up last week!


This week’s share is screaming spanakopita. I plan on taking the kale, collards and

Mustard greens and making spanakopita. You can find the recipe at Foodies Farms and Friends - Cooking with local produce.



I will most likely use the carrots as a side vegetable to a meal I will cook this week. I will peel the carrots(use the scraps from peeling in a chicken stock), sauté with olive oil, salt and pepper and garnish with chopped parsley.


I will most likely toast the sweet potatoes and make a sweet potato soup. I usually chill the soup and put it in the freezer for that fast last-minute meal on a colt wet day. You can follow the attached recipe and substitute the sweet potato for the squash. Foodies Farms and Friends - Cooking with local produce You can also use any stock you wish. Vegetable, turkey or chicken stock all work well.
