Mmmm, comforting (and nutritious!) cornbread


Cornmeal is amazing! This grain can be very nutritious, especially if whole-grain (with the germ and the hull) and organic.


Good thing that's exactly what our lucky CSA members got in their MoCo Made box last week.


Here is a recipe from Jo Robinson's "Eating on the Wild Side".








Cornbread

1 cup Nicks Organic Farm cornmeal

1 cup flour (all-purpose)

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 large Nicks Organic Farm eggs (you got those, too!)

1/3 cup Honey Effects honey (and this!!!)

3 tbsp unsalted butter, melted

2/3 cup plain yogurt

2/3 cup milk


  • Preheat oven to 425 degrees. Grease a 8" or 9" square baking pan.

  • Combine dry ingredients in a mixing bowl. Make a well in the center.

  • In a separate bowl, whisk together the remaining ingredients until they are thoroughly combined. Pour the liquid ingredients into the well of dry ingredients and stir until "just combined". Pour batter into greased pan.

  • Bake 20-25 minutes. Serve warm or at room temperature.
