Garlic Scapes, Beets, Radishes,

Garlic Scapes

Keep in the chiller drawer of your fridge. When ready to eat, trim the ends (the hard part) by about an inch.

Beets

Eat the greens as soon as you can! They are highly nutritious. Trim the greens from the beet root, eat. Then, you can store the beet roots in your fridge for a week or more! They last a long time without the greens attached.

Radishes

Trim the greens from the radish root and add to a salad. Makes a nice slightly spicey addition. The roots will last longer without the greens attached.
